Brewing Tips: Water Temperature: 100°C Boiling Water – Gaiwan/Purple Clay Teapot: Tea-to-water ratio 1:18~20; Regular Cup: Tea-to-water ratio 1:100 (e.g., 5g of tea for a 500ml cup), steep for about 5 minutes. (Note: Brewing time is a suggestion, adjust according to personal taste preference.)
This Tieguanyin is produced in Gande Town, Anxi, which is one of the four core production areas of Tieguanyin. The altitude here is moderate, resulting in consistent tea growth.
What is “Zhengwei Tieguanyin”? – It is made using traditional techniques, with more withering and cooling to achieve full fermentation of around 50%. It has a rich floral and fruity aroma instead of a grassy taste. The aroma of the Tieguanyin roasted in the traditional way is delicate and unique, with a distinctive orchid fragrance. The dry tea appears black with a darker hue.
Tuosuan Tieguanyin: Due to lower fermentation, it appears greenish. It has a distinct floral and grassy aroma. It lasts for about 3-5 infusions and is less durable. It may be too stimulating for the stomach.
Zhengwei Tieguanyin: Fully fermented, appearing lustrous dark green. It has a rich floral and fruity aroma, with a unique orchid fragrance. It remains flavorful for up to 8 infusions, lingering with fragrance for more than 10 infusions. Due to complete fermentation, it has a mild nature suitable for all ages.
While other types of tea are generally better in spring, Tieguanyin is often better in autumn. Spring tea is challenging to make due to more rainfall.
